Ingredients
- ½ avocado (peeled, pitted)
- ¼ cup fat-free, plain Greek yogurt
- 2 tablespoons lemon juice
- 1 teaspoon shallots (chopped)
- 3 tablespoons fresh dill (chopped)
- 1 tsp avocado oil
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 2 avocados (diced)
- 2 cups dry farro
- 3 ounces reduced-fat goat cheese (crumbled)
- 4 cups arugula
- ⅓ cup green onion or scallions (chopped)
- ¼ cup dried cranberries
- ¼ cup chopped walnuts
Directions
- Prepare farro according to package directions.
- Prepare salad dressing, combine ingredients into a food processor and process to a smooth consistency. Refrigerate any remaining dressing for future use.
- In a large bowl, combine cooked farro with arugula, green onion, cranberries, chopped walnuts and apples.
- Drizzle the Avo Lemon & Fresh Dill Herbed dressing and sprinkle goat cheese on top of the salad.
