Ingredients
- 1 pouch microwavable brown rice
- 1 can no salt added black beans, drained and rinsed
- 1 cup of frozen pepper and onion blend
- ¼ cup salsa, plus additional for topping
- 1 medium avocado, sliced
- 1 medium tomato, diced
- ½ cup shredded cheddar cheese
Directions
- Cook brown rice according to package. Mix 1/2 cup salsa with black beans in a microwave-safe dish.
- When rice is done, cover and heat black beans and salsa in the microwave for 90 seconds, or until heated through.
- Place pepper and onion mix in a microwave-safe dish. When black beans are done cover and cook them in the microwave for 2 minutes, stirring halfway through cooking.
- Split rice, black beans and salsa, and peppers evenly between 3 bowls. Top w/ sliced avocado, diced tomatoes cheese, and additional salsa.
